From turf to tacos: How this couple started a Mexican food truck

Colin and Jen Merritt discovered a new passion when they eloped to Mexico in 2011 for a beach wedding and the trip of a lifetime. After live-streaming their vows to family and friends back home, they embarked on an epic honeymoon, taking in the flavours of Mexico from coast to coast.

The seed of an idea was planted. But while Colin had always loved cooking and was passionate about healthy food, he worked in insulation. Jen was a massage therapist. They did have one asset though: Colin’s work truck, a Hino 300 Series.

El Taco Loco is born

Started as a pop up market a couple of years ago and 12 months later, Colin and Jen made the leap and purchased ‘Julio’ (trucks name) to provide food enthusiast with the ultimate Mexican authentic cuisine in the Hawkesbury region. 

Colin had selected the Hino 300 because his brothers, who were turf farmers, found it reliable and comfortable. It turned out to be adaptable too. The truck was outfitted with fridges, grills, an exhaust fan, generator, power points, hot and cold water, gas and air con. 

Colin and Jen dubbed their new baby Julio, and picked him up on November 4 – their wedding anniversary.

“Taking the leap of faith to start the business and follow our passion was one of the biggest moments in our lives,” Jen described.

Julio is now a regular fixture in Windsor, with Monthly Mexican Mondays at the Hawkesbury Hotel, and bookings at weddings and events such as the Sydney Blues and Roots Festival.

Colin and Jen use the best locally-sourced produce and free range meat, all gluten free, with vegetarian and vegan options. Looking for a recommendation? 

“My favourite dish is the vegetable tacos with chipotle hot sauce and guacamole,” said Jen.

Taking their flavour further

Colin and Jen are constantly updating their skills with trips to Mexico, bringing new ideas and flavours back home. Their goal is to take Julio full-time, travelling across Sydney for weddings, birthdays and special events.

“We want to continue getting our fresh and healthy concept of authentic Mexican food out to our local community and beyond,” said Jen. “Our passion is serving not only tasty food, but food that’s good for you.”
